4 Roma tomatoes, fresh mozzarella cheese, 6 large basil leaves, thinly sliced, 4 eggs, 4 egg whites, 6 tbsp water, s and p oven to 400 degrees. four 6-oz ramekins, nonstick cooking spray. Divide the tomatoes, mozzarella and basil between ramekins. whisk together eggs, egg whites, water. Divide mixture between the ramekins, pouring over tomato mixture. Place the ramekins on a baking sheet, Cook until the eggs are set, about 20 minutes.  try with sage and mushroom
