I have advice for you today!  Things you shouldn't do: go to college (just kidding, but seriously the  work load is just insane!), decide to bake and decorate hundreds of giant  sugar cookie favors for your brother's wedding (which happens to be this  Friday!) and don't ever, ever, ever go so long without blogging! Deciding  to take on all of those cookies when I'm not at all a pastry chef or a  professional when it comes to decorating cookies was just too much. Life is  taking a toll on me, kids, and I'm not even 20 yet.   BUT. I have things that you should do! Bake this cake!! (duh). Sprinkle  loads of powdered sugar on it (again, duh). Serve it with scoops of ice  cream! Serve it with drizzles of homemade salted caramel sauce!! I served  it only with powdered sugar, but please don't be like me. Go crazy and be  over the top with it. Add extras! Everyone loves ice cream and caramel  sauce. You cannot go wrong!  Seriously though. This cake was ridiculous!! My mom found the recipe on  facebook and it looked so simple & easy, that we decided to whip it up a  couple of weekends ago when we had some company. It was so good and was  finished so quickly, that I knew I had to make it again asap, so that I  could share it with you.  The second time I made it, I literally had to  hide one of the cakes (it makes two 8" cakes or one 13" x 9" cake) so that  I could photograph it.   I know that this is kind of a dessert that should be shared during the  autumn months, but I've been on a total apple kick lately and an apple a  day keeps the doctor away, right? So. This is how I'm getting my apples in.  Through cake. This cake is so so so delicious. It's moist and dense, with a  nice crispy, crackly top. Also, the apple to cake ratio is perfect. Just  enough apples and just enough cake batter. I cannot say enough good things,  just makeeeee!   ps: I used golden delicious apples because they are my fav! use whatever  you have/love!  One Bowl Apple Cake  2 eggs 1-3/4 cup sugar 2 teaspoons cinnamon 1/2 cup canola oil 6 apples, peeled & chopped 2 cups all-purpose flour 2 teaspoons baking powder  Preheat oven to 350 degrees. Lightly grease two 8" pans; set aside. In a large bowl, whisk together eggs, sugar and cinnamon until smooth and  thick. Add the peeled, chopped apples and mix until all the apples are  thoroughly coated. Add flour and baking powder and mix well until all the  flour is absorbed. Divide the batter evenly between the two prepared pans.  Bake for 40-50 minutes, or until a toothpick inserted near center comes out  clean. Cool in pans for 15 minutes, then turn out onto a wire rack to cool  completely. Store loosely covered with plastic wrap or in an airtight  container for up to three days.
