30oz raw unpeeled pearl onions 2c heavy cream 3 dried bay leaves 2T chopped, fresh flat leaf parsley 2 garlic cloves smashed but not chopped (they will be removed from the sauce before serving) ½t freshly grated nutmeg 1t salt 1/8t white pepper 1c chicken stock 1T corn starch, as needed To peel the onions, bring 4qt of water to a boil & add onions & boil for 3 minutes. Drain& immediately plunge ice water bath cut the root end off then pinch the other end & the onion will pop right out
