Righto crew - Footy Finals time means my take on a different How-To recipe to impress the masses while the beer is flowing and the whistle is blowing. How To? I've taken Australian Cooking, mixed it with Mexican and South American Flavours and come up with JERK PORK TACOS w Burnt Corn Salsa. (yep...it tastes like it sounds)
It's a demonstration video made for you...so take your time and follow it carefully.

**Ingredients - JERK PORK TACOS w Burnt Corn Salsa**
General
1 pork fillet
1tsp salt
1tsp pepper
½tbs olive oil
1 ½ tps smoked paprika
Jerk Sauce
3 spring onions, roughly chopped
1 bay leaf
½tsp ground cumin
½tsp ground coriander
2 thyme sprigs
¼tsp all spice
1 block of palm sugar, roughly chopped
Juice of 1 lime
3 coriander stems, washed
1 long red chilli, roughly chopped
1tbs white wine vinegar
1 clove of garlic, roughly chopped
2cm piece of ginger, roughly chopped
4 cherry tomatoes
Burnt corn salsa
3 corn cobs, peeled
¼ red onion, finely diced
½ punnet cherry tomatoes, halved
¼ iceberg lettuce, finely shredded
¼ cup coriander leaves
½tbs olive oil
Juice of 1 lime
½tsp salt
½tsp pepper
Coconut Sambal
½ cup desiccated coconut
Juice and zest of ½ a lime
½ tsp smoked paprika
½ tbs red onion, finely chopped
2 cherry tomatoes, roughly chopped
