We went to Lincoln Ristorante, one of Manhattan's ritziest restaurants, to chat with head chef Jonathan Benno about the intricacies of homemade pasta and the art of modern italian food. Before opening Lincoln Ristorante in 2010, Benno worked with Thomas Keller at The French Laundry in Napa Valley and at New York's Per Se. It's fitting that, for this episode of Munchies, Benno chose to visit chef Nick Kim, who trained under Masa Takayama and then worked across the hall from Per Se as the head chef of Masa. We had some of the best sushi we've ever had—and some of the best food we've featured on this show, period—at Kim's restaurant, Neta. After enjoying a 15-course omakase with Benno, his sous chef Chung Chow, and Mac Truck owner Dominick Tesoriero, we headed north for a beer at Peter McManus Cafe and then a late-night tripe cutlet sandwich at Lincoln. This is New York fine dining with two of the most important fine dining players. Enjoy.
