Cilantro Lime Cucumber Salad / thefoodcharlatan Yield: 5-6 side servings Ingredients 1 jalapeno, seeded and finely diced 2 cloves garlic, finely minced 3 tablespoons fresh lime juice 1/4 teaspoon crushed red pepper ½ teaspoon salt, or to taste black pepper to taste 3 tablespoons olive oil 2 cucumbers, very finely sliced (see photos) 4 tablespoons minced cilantro, to taste Instructions Dice the jalapeno and garlic and add to a medium-sized bowl. Add 3 tablespoons of fresh lime juice, crushed red pepper, salt, and pepper. Use a whisk to incorporate the 3 tablespoons olive oil. Set aside. Finely slice the cucumbers. Use a mandolin if you have it, but a very sharp knife will do the trick. (See photos below.) Add the cucumbers to the dressing and stir together. Finely mince the cilantro and add it to the bowl. Stir to combine. You can either let it sit in the fridge to marinate for a couple hours, or serve immediately. Notes Make sure that you let the salad sit on the counter for a little while before serving if it's been in the fridge; the olive oil solidifies slightly when it's cold.

Rustic Garlic Mashed Potatoes *****VERY IMPORTANT FIRST STEP***** FIRST PEEL THE POTATOES AND SOAK THEM IN COLD WATER FOR 30 MINUTES (CHANGING THE WATER 3 TIMES) - this step helps remove the starch so the pototoes aren't "gluey" when you mash them.... AND THEN CUT THE PEELED POTATOES AND PUT THEM IN THE CROCK POT. I pretty much doubled this recipe (a little over 5 lbs of potatoes, 1 32oz box of chicken broth, 1 tbs garlic, 1 bayleaf, 1 tsp salt, I doubled the dairy for mashing too and ended up using about 85% of it for desired consistency). COOKING DIRECTIONS:::::: 1. In a 3-1/2- or 4-quart slow cooker, combine PEELED AND CUBED CUT potatoes, garlic, and bay leaf. Pour Chicken Broth over potatoes. 2. Cover and cook on low-heat setting for 6 to 8 hours or on high-heat setting for 3 to 4 hours. 3. Drain potatoes and remove and discard the bay leaf. Return potatoes to slow cooker and add the Salt. 4. In a small saucepan, heat milk and butter until steaming and butter almost melts. Gradually add the milk mixture to the potatoes while at the same time mashing the potatoes with a hand mixer or potato masher. Continue adding the milk mixture until desired consistency. ~ TD ~

Bacon Cheddar Patty Cakes Bacon Cheddar Potato Cakes - made from leftover mashed potatoes 3 slices bacon 4 cups cold leftover mashed potatoes 2 eggs 1 teaspoon onion powder (I like real chopped onion in mine) 1/2 teaspoon salt 1/2 teaspoon ground black pepper 1 cup shredded Cheddar cheese Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned and crisp, about 10 minutes. Remove the bacon slices, crumble, and set aside. Leave the bacon drippings in the skillet. Mix the mashed potatoes, eggs, onion powder, salt, and black pepper together in a bowl; stir in the crumbled bacon and Cheddar cheese. Form the mixture into 8 patties. Heat the bacon drippings over medium heat, and pan-fry the patties in the drippings until crisp on each side, about 4 minutes per side.

ngredients 3 large skinless chicken breasts ( bone in) 1 (14 1/2 ounce) cans chicken broth 2 (7/8 ounce) packages chicken gravy mix or 2 (7/8 ounce) packages mushroom gravy mix or 2 (7/8 ounce) packages brown gravy mix Directions Place chicken breasts(you may remove bones if you like) in crock pot. Pour in chicken broth. If it doesn't cover the chicken, you may add a little bit of water. Cook on low 8 hours, or high 4-5 hours. Check for tenderness. When it fall off the bone when pulled with a fork, remove from crock pot. Remove bones. In a saucepan, pour 2 cups of broth from crock pot. Add 2 packages gravy mix and stir until it thickens, about 2 minutes. If you like you can make gravy from scratch, using the crock pot broth. Serve gravy over chicken. I always serve this with mashed potatoes, but noodles would be good too. You may season to taste at this point, but the gravy mix and the chicken broth are pretty salty, so taste first. Enjoy! Note:. I served this to my husband, only using 1 cup broth and 1 gravy package. I refrigerated the rest of the chicken and broth, making it again the next day with the other gravy package.
