Coconut Fig Ice Pops | 24 Guilt-Free Ice Pops That Will Make You Go Ahhhh Print RECIPE | DAIRY AND SUGAR FREE COCONUT FIG POPSICLES Prep Time: 15 minutes Cook Time: 8 hours Total Time: 8 hours, 15 minutes Yield: 6 popsicles Ingredients 1 cup coconut milk 3 tablespoons maple syrup ½ tablespoon pure vanilla extract 5 ripe figs Instructions In a bowl, whisk together the coconut milk, maple syrup and vanilla extract. Peel the figs. Use your fingers to crumble the figs into the coconut mixture. You'll want to break the figs up into nickel sized pieces or smaller. Whisk all ingredients together. Pour the mixture into your popsicle mold. If you don't have one you can use paper cups, or even ice cube trays, with popsicle sticks. Freeze overnight. Enjoy! Notes If you have difficulties getting your popsicle out of the mold, run the mold under hot water for about 10 seconds. It should slide out with little effort. FYI, in place of maple syrup you can use honey or agave nectar, or you can omit it all together.
