ZUCCHINI ONION PIE RECIPE 6 Servings~Prep/Total Time: 30 min.  Ingredients: 3 EGGS 1 c. grated PARMESAN CHEESE 1/2 c. CANOLA OIL 1 tblsp. minced fresh PARSLEY 1 garlic CLOVE, minced 1/4 tsp. SALT 1/8 tsp. PEPPER 3 c. sliced ZUCCHINI 1 c. BISCUIT BAKING MIX 1 sm. ONION, chopped   Directions:  In a large bowl, whisk first 7 ingredients.  Stir in zucchini, baking mix & onion.
